"Quick" & Easy Mango Cheesecake

I cannot even mention the number of times I made this, every time its a super hit with friends and colleagues, in fact it has become a tradition for me to make this at one of my friends kids birthday since 3 years.

This entry goes to AFAM hosted by Deepa and A-Z of Indian Vegetables hosted by Nupur, Since I made Desi Quesadilla a while ago and I could not find any appetizing recipes with Q , hence the tittle "Quick"

This in fact is very quick, easy and taste amazingly light and tasty, can make this ahead of time and hence a time saver dessert. A low fat version can be made by using sugar free or fat free substitutes

1/2 can Mango Pulp( Alfanso works the best for color)
1 Reddi pie crust
4 ounce Cream cheese
8 ounce cool whip
2 pack Knox gelatin

1. thaw cream cheese to room temperature
2.In a food processor add cream cheese, cool whip, 2tbsp sugar(optional) and mango pulp. mix well until all the cream cheese is mixed
3.Now prepare gelatin according to instructions and add to the mango pulp mixture
4. mix well and pour into the ready made pie crusts
5. refrigerate for 4-5 hrs

Serve chill

Looks lovely, Sreelu! One of my best friends, Megha, would make something like this (she called it Mango Pie) all the time, and it was such a crowd-pleaser!

My aunt gave me a similar recipe years ago. She, too, called it Mango Pie. No matter what the name. It is a huge hit, each time!

Mango cheese cake is perfection. That slice there is so perfectly cut even the top chefs on TV don't get it done so neatly. Ah, it is a testimony to how often you have done it. Great job. Personally I am not a big fan of eating cheese cake but my best friend, Susan - you can kill that girl with cheese cake. As a matter of fact, I am going to bookmark your recipe and make it for her birthday next month. Thanks for this wonderful idea! :)

I was looking at recipes to try for Diwali Party. We are having abt 12 adults and 6 kids, how many ready crusts do u think I should use???

Jayashree, A big crust can be cut into 8-10 slices, 8 being generous and 10 be ok size, so 2 big crusts and 1 small one would be perfect.Trust me everyone asks for an extra with this dessert.
