Solace in concrete Jungle

Had a chance to spend some time at a friends farm house in the outskirts of Hyderabad. Boy what a welcome sight it was, clean air free from pollution, its seemed like nature at it best. Beautiful weather with overshadow skies added magic to our visit. It was different shades of green till our eyes can see. This farm house housed tons of fruits.

So here is the trivia, guess what trees/fruits are these, will upate the posts with the pictures of the fruits tomorrow

ChakraPongali - Sweet Rice

I dread looking at the scales on my weigh machine, ever since we have been to India we have been pampered with food especially sweets. There is something magical about mom's food, no matter how much I try to make it the same with exact measures it still never tastes the same.I guess it's the mother's love and affection that adds a different dimension to the taste.
Chakra pongali is a very traditional sweet, means Charka means sugar and pongali is cooked rice, its like a sticky rice pudding, usually made with sugar or jaggery, fried coconut pieces are added and this adds to the flavor the dish. I heard that edible camphor is added in tamilnadu and this makes it very different.This also is usually made a prasadam is temples, I prefer to eat this when its piping hot. Generous doses of ghee elevate the taste however you can always eliminate ghee to make it into a more healthier version.
Few ingredients and simple process make this a delicious dessert
1 cup rice
1/2 cup moon dal
1 cup sugar
1/4 cup coconut cut into small pieces
1/4 cup cashew nuts
1/4 cup raisins
a pinch of elaichi powder
2 tbsp ghee
1. fry moong dal and rice for a minute
2. add water and pressure cook until 3 whistles
3. In the mean time heat a pan add sugar and about 1/4 cup of water and bring the sugar to boil mixing consistently in order to avoid burning
4. this sugar solution should have a consistency of a thick syrup
5. add the boiled rice and moong dal mixture to the sugar syrup add elachi powder and mix well
6. in a separate pan add ghee when hot add coconut pieces, cashew and raisins
7. add the above to rice mixture and mix well
8. add another tbsp of ghee and remove from the heat
Serve hot
