Green Tomatoes

Green Tomatoes

Leaves have fallen, flowers have faded, yard looks dormant and dead, it was time to pull out Tomatoes trees that gave us a bounty through out summer. With the cold weather the last crop has mostly been green tomatoes, well I have never made anything with green tomatoes. Now I am in need of suggestion on what can I do with my last crop ?

Dear Readers, please suggest any recipes that I could use the bounty

You can make fried green tomatoes of course, or green tomato pickle. But best of all, they should ripen if you put them in a paper bag for a day or two. VegeYum

Hi,
You can make green tomato rice with these beauties. This summer we just planted one tomato plant and it occupied almost 50% of our backyard, every day I used to get tons and tons of these green tomatoes, I did distribute it to all my neighbors and friends, and finally one day I came up with this new idea to make some rice with tomatoes. Cut them lengthwise thin, fry them in 2-3 spoons of oil along with lots of cashew, don't add any tamarind because green
tomatoes are very sour, once they are done cooking for 5 min add any vangi bath powder, salt and add fluffy rice, mix well and eat with any raita. Cucumber raita goes very well with this.

So beautiful!! You can make any curry with them as you do with other veggies and makes a great tangy Pulao too. Enjoy!:))
