Cauliflower 65 (Pan Fried Cauliflower)

Stumbled upon pan roasted cauliflower recipe by dear Lavanya of Cookery Corner , knew right away that I had to make this must tell you this dish was very simple,quick and since it had besan/chick pea flour almost had bajji kind of flavor.Made few modification by adding my favorite CC powder (cumin & corriander powder). Simple Ingredients
Besan (chick pea flour)
Red chili powder
Turmeric
Rice flour
Corn Flour
Boil cauliflower florets in microwave and coat them well with above mixture

Pan fry them with little oil I generally use PAM ,added a little bit of CC powder for additional flavor , I think garam masala also would go very well. Toss and fry till the cauliflower gets a golden color.
Was enjoyed and relished by everyone at home .

Not everyday that I make/feed deep fried stuff, but once in a while I believe its good to have some fat in terms of oil. Today's recipe is pretty standard back at home infact sometimes its eaten even as breakfast.These are called punukulu in Telugu also sold as street fare with various chutneys as accompaniments.My favorite chutney is ullikaram (Onion Chuntney) ,Bombay chutney or peanut chutney . Since it was made for kids specially today they munched these snack with ketchup.

This is quick ,fast and since its deep fried very delicious snack. My kids love it.
Works best when dosa batter is fresh out of the grinder.
Ingredients
1 cup fresh dosa batter (for dosa recipe check here)
2 big tbsp rice flour
2 big tbsp jeera
1/2 cup onion very finely cut (optional)
2-3 g.chilles cut very fine (optional)
oil for shallow frying
salt according to taste

Process
1. mix all the ingredients together to form a think batter
2. heat oil in pan for shallow frying
3. when oil is hot, add a spoon full of the mixture into hot oil ,allow it to fry for a minute on each side till they turn into golden color
4.exercise caution while handling hot oil

These have a golden color very crunchy on the outside and chewy /soft inside, jeera flavor pops into your mouth with the first. Serve hot with either this or this chutney or plain simple ketchup .

Celebrated Varalaksmi noomu Friday, its customary in our house to give kala channa as offering to Goddess Laksmi and then its distributed to the invitees in the evening.I think this is common in AP, so got few kids of channa as prasad as well.

Stumbled upon this recipe from Indira blog, made it a perfect choice of Sabji.However I did not have coconut milk as mentioned in the recipe so skipped it, however the sabji was very delicious and I am happy to find an alternative to cooking channa .

Ingredients

a cup of each kali channa & kabuli channa soaked overnight and boiled with salt
1 big onion chopped finely
2 small tomatoes
2 big tbsp cumin & corriander powder
1 tbsp ginger garlic paste
1/2 cup coconut milk (optional)
1 tbsp jeera,mustard for thadka
few curry leaves

Process
1. Boil channa ,make sure to keep a watch and not to let channa get mush ,also add salt while boiling
2. add a tbsp oil in a pan add ginger garlic paste, cumin & corriander powder fry a little
3. add cut onion and fry till onions turn translucent
4. now add tomatoes and fry well, add coconut milk (optional)
5. grind the above into a fine paste
6. In the same pan add a tbsp of oil add the above paste and add boiled channa
7. mix well and fry for about a minute or two
8. remove from heat garnish with corriander and add lemon if required

serve hot with rotis. Tasted great and was thoroughly enjoy .

Now not everyday it happens that you look at a recipe while blog hopping and realise boy not only is this recipe yummy,easy but guess what I have all the ingredients to prepare it. So happened Sra dear made this elaborate express cooking spread and had a yummy recipe for Roti/Chapathi fry, You see roti's are a daily fare at home for both lunch and dinner ,so as you can guess by the end of Friday the thought of eating dry roti which has been lying in the refrigerator for a week makes my senses very sad, so like a saviour found this recipe to put life back and salvage those dry dear rotis.
The best part of this recipe all the ingredients including curry leaves, lemon,chilies except Onions were home grown and freshly picked right before preparing. I am an ardent gardener and the immense joy to see the saplings grow and fruit is a true bliss. I truly get attached to these plants, each tree I planted had some significance, either a addition to our family or a major event always have a story or an incident behind each tree planted.

From Sra's recipe tested ,tasted and enjoyed it ..,only alteration was added lemon and tomato.

Fried Chapattis
What you need:
Onion – 1, chopped
Oil – 2 tsp
Mustard seeds – ½ tsp
Turmeric – ½ tsp
Chilli powder – ½ tsp
Or
Green chillies – 2, chopped
Salt – to taste
Curry leaves – a sprig
lemon

Heat the oil in a pan, pop the mustard.
Add the onion, curry leaves and the green chillies, fry a bit now add chopped tomatoes.fry for a minute or two
Now add the chapatti bits, the turmeric, chillies/chilli powder and salt,lemon and mix well.

Tomato Chaat Masala

in India, Had a blast, loved every bit of my stay. Getting used to life back here, of all the things in India I miss my parents the most ,Had a chance to spend quality time after a really long time. All in all a great trip. More on the trip and pic in up coming posts


Now coming to today's recipe,folks from Bangalore can easily identify with this snack. Sold as street fare this snack is enjoyed by one and all.
Thanks to the beautiful weather this year enjoyed a bounty of tomatoes, never had such delicious juicy sweet tomatoes.Must admit with me being away for two months I was very skeptical about survival of these plants, with no fertilizers or no extra effort I must say the trees grew well and we now are truly enjoying the fruit.

This makes for a delicious,simple,healthy and extremely quick snack.

Ingredients
2 large ripe tomatoes

For mixture
1 cup poha
1 cup sev/ mixture store brought
1/2 cup roasted peanuts
1 tbsp green chutney
1 tbsp sweet chutney
salt
lemon
and corriander for garnish

Process
1.mix poha, mixture, peanuts, salt, chutneys and lemon
2. cut tomato into thick wedges
3. Top the tomato with above mixture and garnish with corriander

Makes one yummy yet simple and quick snack. This will be my entry for Express cooking hosted by Malguri. Now her rule was something that takes less than 30 minutes from finish to start, this take a fraction of the time mentioned and you can whip up as many as wanted in no time.
