Spinach Fry with Moong Dal

Can't believe it February already, Jan flew by very quick. Next week my favorite author Chitra Banerjee Divakaruniis going to be in town and I am really looking forward to her book reading and meeting her in person. I have read almost all of her works and can't seem to put my book down once I get started, of all her works Palace of Illusions in by far my favorite. She has her new book out called " One Amazing Thing ", can't wait to get my hands on the autographed book.

Coming to today's recipe as a vegetarian my only good source of protein is from spinach and dal and trust me both of these can get very boring , today version is a newer version that I have tried few weeks back. Tasted very good and its quite easy to prepare.

about a pound of spinach, cleaned and chopped fine
1/2 cup of moong dal soaked in water for about 1/2 hr

For seasoning
2 tbsp finely diced ginger
4-5 red chilies
1 tbsp cumin/jeera
1 tbsp urad dal
1 tbsp mustard seeds
8-10 curry leaves
a pinch of tumeric
salt according to taste
2 tbsp oil

1. Heat a skillet and add oil , when hot add cumin,urad,mustard, red chilies , ginger and curry leaves
2. saute till mustard seeds begin to crack
3. Add drained moong dal and fry till the raw smell is gone for about a minute or two
4. Add cut spinach, tumeric and salt and stir well.
5. Cook covered for 4-5 minutes.
6. Spinach cooks very fast, check for salt and adjust accordingly ,remove from heat and serve

I bought "Palace of Illusions" by her, yet to read. Has a great review.

Spinach dal looks yum, I like the way Palak melts when cooked. Good one.
