Curried Quinoa & Vegetables Soup -- Mothers Day Wishes In Advance !!!



I know Mothers day is still few days ahead still wanted to wish all the fabulous mothers, grandmothers, aunts ,sisters ,sister-in-laws and my best friends and my blog readers a very happy mothers day in advance. Being a mother or mother figure is a serious job and a job where learning happens everyday and  on the job and the one that does not come with rules or instructions. Being a mom to me means to follow your heart with best intentions and hope at the everything works out at the end.


The impact mom has on a girl’s life is immense, at some point in our lives I think we turn into our moms like it or not :).

I was raised by a very level headed, smart and a balanced mom who taught me always to hold my head high and be proud of what I do no matter how big or small of a task it is and always to respect traditions and emphasized how important it to maintain a good relation say with in-laws or my very big large extended family. And I cannot tell how proud I am of my mom , also fortunate that I share a loving relationship with my mother-in-law who never shy's always from paying a compliment or to tell me to take a time out of my hectic pace to do something that I am passionate about.
Feel truly blessed to be surrounded by such role models who include my grandmothers, aunts, mom, mil,sil and not to mention my rock star girl friends wear different hats of working/stay-at-home moms, raising kids, running a household and doing million other things but yet know when to take a pause and enjoy life.

Coming to today's recipe last week met a friend for lunch at a restaurant in Palo Alto called Sprouts, loved the choice of salads and sandwiches that were offered everything organic and made fresh to order. Saw Curried lentil soup with Quinoa on the menu and I knew I had to try it. Ordered it and was not disappointed, tried recreating the same with the fresh farmers market produce this weekend.Loved the taste and relished it to hearts content.



Ingredients makes for about 4-6 cups
Use this is a rough guide  feel free to substitute ,add or change up ingredients to your choice


Fresh Ingredients


1 cup boiled quinoa
1/2 cup fava beans
1/2 cup fresh peas
1/2 cup green onions
1/2 cup celery
1/2 cup carrot
1/2 cup parsley
1 garlic clove chopped finely



Seasoning

salt according to taste
1/2 cup lemon juice
1 tbsp of oil
corriander for garnish
3-4 cups vegetable stock(optional)



Dry Ingredients

1 tbsp of cumin/corriander powder
1 tbsp of garam Masala
1/2 tbsp red chilli powder/paprika
1/2 tspn turmeric

Fresh Vegetables

Dry Ingredients


Process
1. Heat a pan large enough to make about 6 cups of soup.
2. When hot add oil, garlic and saute for few seconds till garlic is well cooked.
3. Now add all the dry ingredients and saute for 10-20 seconds, this should give out a strong curry aroma :)
4. Now add all the vegetable and mix till they are well coated with masala
5. Add 3-4 cups of vegetable stock or water and add salt. Adjust the amount of water to suit the consisteny of the soup you like
6. Allow it to boil on simmer with closed lid for about 10 minutes.
7. Now add boiled quinoa and allow it to simmer for about another 8-10 minutes.
8. Remove from heat add lemon juice and adjust for salt accordingly.
9. Garnish with cilantro and some crushed tortilla chips and serve hot.


My mom is super fanatic healthy eater and this soup would have been up her alley if she tried it.
