Yes summer is finally here, no more pressure of homework, tests, driving round classes or the rush to be out of the home by 7.20 AM I know I know could get used to summer vacations. Life has been very busy off late, have been burning midnight oil and have no energy to post inspite of having some really delicious recipes and pictures. Today sure is an exception there is a high chance that I could go to bed before 11.00 yay to that :)
Summer vacations are magical I truly enjoyed mine growing up. At the close of school our mom would pack suitcases and we would head to our grandparents home and spend the entire summer almost 6 to 8 weeks in the company of cousins, aunts ,uncles and grandparents. Life was so simple then all we had to do was to eat and play. "Business" Indian version of Monopoly was played for weeks, had cricket matches and as we grew up started playing endless hours and wee into the night card games it was truly a blissful childhood. Enjoyed mangoes, munjulu and other summer fruits to hearts content. The best part of summer vacation was the nights all our cousins would sleep in a row laughing,counting stars and listening to amazing stories by my eldest uncle who truly transported us into dreamland.
Times have changed but we cousins are still tight knit, try to keep in touch and we wish our kids had a chance to experience the same .
Coming to today's recipe I constantly look for healthy snack options where food is not fried and not overly salty yet satisfying . Now Chaat's fits the bill perfectly when made with fresh vegetables,sweet , savory and tangy sauces and myriad of spices for some complex and tantalizing flavors. Substituted boiled Vatana/Batani for poori's to make it healthier and guilt free today.
1 cup Batani/Vatana ( dry yellow peas) soaked over night
half an onion sliced thin
1 cucumber deseeded and sliced into one inch cubed
1 potato boiled and cubed into one inch
1 tomato cubed
1/2 fresh cilantro chopped finely
1 sprig of mint super finely chopped
1-2 green chilies finely chopped
optionally finely diced red and green bell pepper would add lots of texture and crunch
For dry spices (
1 tbsp of chaat masala
1/2 tbsp rock salt or kala namak
1/2 tsp of garam masala
1/2 tbsp red chili powder
optionally 1/2 tsp of anardana powder
salt according to taste
1/3 cup imli chutney ( I used store brought)
1/3 cup mint chutney
1/3 cup of fresh lemon juice
cilantro, sev and puffed rice
1. Pressure cook soaked dry peas with salt, tumeric and ginger till about 3 whistles.
2. Allow for the cooker to cool and drain the water out.
3. In a large mixing bowl add boiled peas, fresh ingredients, spices and sauces and give it a good toss till peas are well coated.
4. Check for taste and adjust according to you're liking , I like mine on the sweeter side.
5. Garnish with cilantro.sev and puffed rice and serve with a cold glass of Mango juice or lassi
