Yellow Beets Salad

Routine is a good thing, well almost. Summer went by in a blink of an eye, kids are back to school. This summer has been quite a memorable one. We traveled to India spent some quality time with parents and in-laws, traveled extensively in India and more specifically visited Kashmir, a dream come true ( travel to Kashmir deserves its own post) and ate to hearts content and shopped till I dropped literally. Now life is back to organized chaos school, classes, and all the other activities around kids.

Few weeks ago at a company sponsored lunch one of the items on the menu was yellow beetroot salad, boy it was so good and delicious that I had to recreate the same at home.

So this weekend during our weekly trip to farmers market picked up some delicious looking yellow beets and recreated the same, happy with the recreation and relished it with a bowl of pepper quinoa salad.

Gorgeous looking yellow beets, this isthe first time ever I brought these babies home, sure this won't be the last time :)
Preparation time ~20 min
Serves about 2~4

3 large yellow beetroots
few springs of mint
few springs of cilantro
salt according to taste

Salad dressing
pinch of paprika
1/2 tbsp of dried Oregano
1/4 cup EVOO extra virgin olive oil
1/3 cup balsamic vinegar ( I used sweet fig Vinegar)
fresh pepper according to your taste

1. Peel Yellow beets and cut them into one inch cubes.
2. Microwave them for 3~5 minutes till well cooked, check to see that there is no rawness in the beets add salt and keep aside
3. In a bowl whisk all the salad ingredients together and mix well.
4. Now toss the salad dressing onto to the boiled beets and mix well till all the cubes are well coated.
5. Allow for the beets to cool down and enjoy as delicious salad or an appetizer
I had them along with my Quinoa salad and it was perfect. For those in the US have a lovely long weekend blogdost's.

Zucchini Patties/Latkes~ Healthy,nutritious and delicious

Yes yes I am still existing, I know it's been a really,really long hiatus and yes I have reasons for my absence.Last few months have been extremely busy, crazy, hectic and not to mention strenuous. Anyone who has gone through a home renovation can vouch for this. Few months ago decided to remodel our house so first came out the kitchen and then walls and then floors and so on. Remodeling was very stressful, having never experienced any thing like this before it was quite a challenge to visualize, communicate the same to the contractor and finally see the end product. Never the less end result is quite satisfactory and glad that phase of life is over,well almost.
Having my kitchen back is like a blessing. Yesterday some kind soul at work brought these humongous sized Zucchini, they looked tender and delicious and the produce did want me to create something new and break my blog silence. So decided to make Zucchini patties/latkes, any way to make the kids eat :)

Zucchini patties are fairly easy to make and take less than 30 minutes. There are couple of ways to make this, I made the Indian version.. Here goes the recipe

Makes for about 10~12 patties
Preparation time 30 Min

2 lbs of Zucchini
handful of mint leaves
1/2 a bunch coriander leaves- about a cup
2~3 green chilies adjust according to your liking

Salt according to taste
tbsp of Cumin powder
1/2 cup rice flour
3/4 cup channa besan/chick peas flour
2~3 slices of bread crumbled finely
pinch of cayenne/red chili powder
pinch of chaat masala -optional
oil for shallow frying

1. Peel Zucchini and grate,  I used my food processor and grated Zucchini with chilies,coriander and mint leaves all the ones.
2. Add salt to the grated mixture and allow to sit for about 5 minutes, Zucchini sheds a lot of water. After five minutes squeeze out all the water.
3. Now add all the dry ingredients rice flour, channa besan, chat masala, cumin powder and red chili powder and mix well.
4. Adjust well for salt
5. Pour oil into a shallow pan and allow oil to get hot.
6. Take the zucchini batter and make into a ball and then flatten into a patty and gently lower down into the hot oil
7. Allow the patty to cook on medium heat for about 2~3 minutes each side.
8. Remove from heat and serve hot

Serve with ketchup,mint chutney or raita, makes for a delicious and nutritional snack. Add these patties to make a delicious pannini sandwiches with some tomatoes and onions thrown in. School starts from Monday and boy we are ready :)
